This wine is a blend of Chardonnay (35%), Gewürztraminer (30%), Pinot Gris (20%) and Riesling (15%). The grapes were pressed directly by pneumatic press, without destemming and at low pressure, separating the flower wine from the pressing.
After static defrosting, each component fermented separately in stainless steel tanks and concrete eggs. Once the cut has been defined, the wine is aged in unroasted French oak caskets and concrete pools for 20 to 22 months.
This wine is the result of the combination of several lots of Pinot Noir, which are made separately and then assembled in order to find the best combination that highlights the character of the Sarmiento terroir and the elegant and delicate profile of this variety.
The grapes are fermented in concrete vessels, using varying percentages (10% - 50%) of grapes in whole bunches and destemmed. Aging takes place in unroasted French oak and concrete covers for 20 to 22 months.
This wine was made with grapes from our Paico Vineyard, on a plot of one hectare of this variety. The vines sit on mostly sandy soil throughout their profile, with a fraction dominated by clay deposits of lake origin.
